Easy and tasty pancake recipe

This is an easy recipe for oladii or small pancakes which are about 5-8 cm in diameter and made of self-raising flour. Larger pancakes called blini are usually made with yeast and a mixture of buckwheat and wheat flour. Small pancakes are ideal for a buffet or Zakuski table as they can be presented with a variety of toppings.

Tip: Sometimes pancake mixture sticks to the bottom of a pan, especially in the beginning of the process of frying. This is for two reasons:
1) The grains of flour are not properly absorbed by the liquids
2) The pan is not sufficiently hot all the way through
Therefore, the "pancakes mess" can be avoided by:
1) by leaving the mixture to stand for about 20 min before frying;
2) heating the pan properly before frying (2 min on a low heat without oil and 1 min on a low heat with oil).

Ingredients: Serves 6

400g self-raising flour
500 ml of milk or buttermilk
3 eggs
½ teaspoon of sugar
30 ml oil for frying oladii

Instructions:

1.Whisk together eggs, milk, butter, salt and sugar. Gradually add sifted flour and mix well. Alternatively add all above ingredients to a liquidiser jug and mix on a medium speed for about 10 seconds.
2.Leave the mixture to stand for about 20 min

3.Heat a pan for about 2 min on a lower heat, add oil and spread it evenly over the bottom of the pan, heat the pan for another minute.

4. . Pour the mixture into the pan. You can use egg rings to make a neat round-shaped oladii.

5.Fry the pancakes over medium heat until golden on both sides.
